What NATO strap brand would you recommend for a luxury watch?

What watch Bob?

I always recommend ZuluDiver, particularly the ones with the chunkier hardware. Only a 20-odd quid job so not sure if what you are looking for. Have some I can photo if necessary.

I've a couple of premium ribbed NATOs from thestraptailor, I don't think I'd go anywhere else now if I was looking for another one. The fabric, finishing and metalwork is top notch.

A watch I don't own yet (Planet Ocean 39.5mm) and a few of my current ones.

Zuludiver look good, although their hardware can be a bit shiny.

Bark & Jack's website is currently closed.

The StrapTailor looks good too.

Can you tell by looking at them whether they are a single or double pass under the watch?

As far as I understand it, all NATO straps are double pass, although you can wear them single pass (fiddly to put on) or just cut off the extra dangly bit of strap.

Zulu are single pass, although Zulustrap (confusingly) also make Nato straps.

I hope that has successfully muddied the waters further.
