I got flashed a couple of times on a European trip last week.
Really annoying as the first one was in Switzerland on the motorway on a bend so it was 60kph. I was in a long line of traffic and following a van so the flash in the face came as a shock. Looked down and an indicated 65kph.
The second was on a French N road that kept varying between 90/100/110 not always with the best signage and at night, no other cars. Reckon I was at most 6 or 7kph over, another flash.
Annoying as I was trying to be careful, setting the cruise whenever I could.
Was under the assumption (presumably wrongly) that they didn't find there way back to the UK post Brexit?

Absolutely- they’ve got the hire company’s details. How can they know who was driving. 
If it was your own personal vehicle they’d not be able to get your details anymore - the one and only benefit of Brexit that I can see.
I’d be quite comfortable about filing them in the bin.

Ignoring it all is all fine and well, right up until you get pulled over for a random traffic stop.
It's not like this is unusual in Europe, very normal that the Police set up traffic stops on random roundabouts / toll booths and pull vehicles randomly.
When they do this, they generally run the drivers details through their systems as a matter of course. This is when you don't want unpaid and ignored traffic violations showing up....
It's really not worth the hassle of not paying if you plan on driving in that country again.
(speaking from experience of colleagues who have ignored it expecting it to not come back and bite them on the arse - it did)

I was flashed in 2021 by a speed camera in Freiburg while overtaking other traffic. It was either yet another one of the glorious make benefit of the withdrawal agreement, or the belt n braces black and silver classic Italian sized number plate, but I never heard anything.Really annoying as the first one was in Switzerland on the motorway on a bend so it was 60kph. In 2018 I received a polite letter from the highways authority of Nordhausen addressed to the, "Fuhrer (of the pkw)" and a decent photo of me and my car in action (with standard reflective plates) for the cost of 10euros, which I thought was very reasonable (less than 10kph over) price for such a souvenir.
I have honestly had about a dozen over the past decade. All gone in the bin. I had one French ticket chased up and I wrote back in English saying I'll contest it in court please send the evidence so I can consult a lawyer. Last i heard from them.

And just to add, pitlane you're wrong. I set off a toll booth alarm by reversing slightly after the barrier was up. Got pulled by the gendarme who were parked up ahead for 20 minutes or so, thorough doc check. Finished with a "thank you for being patient".
You give the European system too much credit. I'd be surprised if a single toll, speeding or congestion charge gets paid by them here so why should I.

Yup - I lived in Italy for over 2 years, 10 years back - in a car with no MOT or UK Tax. Lived in Northern Italy, drove everywhere all the time, drove the length of the country to Sicily and back. Never once got stopped by a "road block" or similar. One occasion I interacted with the police I pulled out of a junction with no seatbelt on (in a convertible). Got asked for my documents. Said they were in the UK, "go on then, and wear your seatbelt!".

Ignore them all EXCEPT Switzerland.
