Been a road rider for a few years now and looking start exploring the local woods/trails etc. what's considered the go to entry/mid level bike or anything to consider when looking at the different options?
Been looking at both the Specialized Rockhopper and the Trek Marlin as they seem to be the most recommended but are there any others or is one better than the other?
Would be looking to spend about 500-700 ish

A lot better than either of your two options above. Yes it’s at the top end of your budget, but a great spec for a relatively budget bike.

I bought my son a Giant Talon a few years ago now - he never really uses it so it's now my spare bike alongside my full sus Orange Alpine.
It's an impressive confidence inspiring bike with a decent spec for the money (it only cost around £750) - I used it through the winter and never really missed rear suspension, I would definately get another.
Could be another option?

I've got a Vitus Rapide 29 that I leave in our camper, very happy with it for less than £700
