Why isn't it a default option when purchasing a Seven? If you don't have one fitted, where do you put your car documents? Is there any other alternative?

Soft Bits for Se7ens tunnel bag is a better option in my view.

They also do draft reducers that have pouches between the seats.

The map pocket is pretty small.

At least here in my country you have to carry some documents about the technical data and legality of the car and it's also advisable to carry the insurance papers (although not neccesary), apart of course of your driving license. I also like to have the printed car manual in case I need it.

Is there room under the seats to put something there like in most other cars?

The thing to remember is that the Caterham is an open cockpit car, so everything will get damp or wet at some point. The space under the seats is reserved for gravel, grass and other debris that gum up the seat runners. Reaching under the seat bar will skin your knuckles every time.

The map pocket works fine, better on SV models where you have more width between the tunnel and side walls, as on S3s they rub on your legs a lot.

Damp and wet is generous, underwater semi-submerged on a number of occasions in my experience! :-)
I reckon I spend as much time trying to keep the “interior” clean as I do the exterior!

I live in one of the sunniest and less rainy places on Europe, so I'm lucky in that sense.

As regard the map pocket, I understand it's installed on the passenger side, so it will not affect my driving comfort.

Mine is fitted on the rear bulkhead between the seats. I only use it occasionally - usually for a flask, or drinks bottle I want to keep upright.

The tunnel bag is much more versatile & gets used all the time. http://www.softbitsforsevens.co.uk/page38a.html I have the touring version.

Remember there is no security in a 7, just stick your docs in the boot.

Why does it not come as standard, well these cars were built on the principle of ‘just add lightness’ so why add extra weight when 75% of the owners would just rip it out

Agreed. I have one fitted between the rear seats.

It's not easy to reach when harnessed in, but looks neat and is useful storage that you can use before and after strapping in.

Amazon Velcro net pockets ~38cm x 25cm attached on the tunnel carpets work for sunglasses, phone etc. mostly out of sight and protected from weather.
