I've been a few times, it is a beautiful city with very, very good cuisine.
It gets ridiculously hot so the time you are thinking of it good for a city break and it really does have a lot to offer in that regard.
Book online for all tickets to see places - it saves a lot of time queuing.

I love Seville, I stayed in hotel fernando III. Good location and the staff were fantastic. I stayed in September so we made good use of the pool and roof top bar. I loved the food and bars, my wife loved the that and the boutique stores. If you go, I recommend trying the tasting menu at the San Marco.
Use Uber if you need a taxi.
My wife and I loved it so much, we almost went back. However, we ended up booking 5 nights in Granada and 6 nights in Malaga old town purely because we wanted to visit another city.

We did 5 days last March and loved it. May have been a day too long, we should have gone to Cordoba for the day. We stayed here https://www.elreymoro.com/index.php/es/. Much nicer than your normal chain stuff.
Great City. Visited last October and stayed in the Hotel Alcázar. Good location, about 10 minutes walk from the Alcazar and Cathedral. A good mid price option.
Both the Cathedral and Alcazar are worth booking in advance. At the Alcazar you have the option of booking a timed tour of the Royal Apartments which is worth it. They are quite strict on time keeping, so get there early if you do that. At the Cathedral You can book a rooftop tour in english which is intestering and gives some great views. I also visited the Plaza D'espana one evening, there was a busker playing on one of the bridges, the sound echoing around, really special.
As others have said, there is probably not enough to fill up 5 days in the city itself, but it is easy to reach somewhere like Cordoba on the train. The High Speed service takes about an hour and the Mosque Catherdral is well worth visiting there.

Firmly on my list of places to go, looks stunning and would quite like to watch a bull fight. 
Again it was visited on the Michael Portillo series on C5 Touring Andalucia, only thing holding us back is it's a pig to get to via public transport and that's our preferred route, we're doing 11 days in Italy in June on the train
, I just need to man up and get a car booked the whole area looks great. 
Loved Seville and look forward to going back at some point soon, it's a lovely city.
What sticks in my mind though was going to the Flamenco show at the Mercado de Triana food market.
A tiny little stage with room for an audience of around 15-20 people seeing the most intense dancing and story-telling. Left us totally shell-shocked for about an hour afterwards. Incredible and highly recommended.

We're there in June for 3 nights and really want to see some proper Flamenco.

Not something that had entered my mind previously, but saw the little theatre when we were walking round the food market (also well worth a visit) and thought we'd give it a go, so booked some tickets for a 6.00pm show.
My previous thoughts on Flemenco were akin to what you'd see on a Benidorm package holiday
so seeing a woman in black, a narrator and a guitar player on a small stage was a revelation. Left us speechless. vixen1700 said:

We saw a great flamenco performance on the steps of the Plaza de Espana. I think the performances are daily, and free, so worth a look. Not something that had entered my mind previously, but saw the little theatre when we were walking round the food market (also well worth a visit) and thought we'd give it a go, so booked some tickets for a 6.00pm show.

The owner/host was great, got us reservations for lunch and dinner at some truly excellent restaurants despite them being fully booked due to the festivities. She sent a driver to collect is from the station who gave us a list of cafes and bars we wouldn’t have stumbled upon otherwise. I’ve only recently run out of the homemade vermouth I bought from one of them

Visited a few years ago got the fast train from Malaga, lovely city plenty to see,do,eat and drink. Good time of year you're thinking about as well, as previous replies we went in the height of summer and it was boiling hot, almost the same as a hot air stripper being pointed at your forehead. We spent most of our time in really cool bars and wandering around the lovely streets in the city centre.

We did it as part of a road trip down south between Christmas and New Year. Nerja, Marbella, Ronda and Grenada before shooting back home. Truly magical place and worth the (cheap) car hire. In fact I think I’d have preferred a hire car with excess insurance rather than me taking my own car. These places need small cars!
