We spent a couple of nights in Denver in 2022. Not somewhere I'd choose to spend much time again.
However, the drive to Vegas from there, via the various National Parks (incl. Rockies, Colorado National Monument, Arches, Zion) and also 2 days in Salt Lake City was well worth it. Not for everyone of course, but we enjoyed it.

Depends how long you have, but if you do end up with a few days can recommend hiring a car and heading down Colorado Springs direction, take in the garden of the gods and then drive up Pikes Peak. If you like exploring national parks and mountains then plenty in this area.
Few big sports teams in Denver area if you want to catch a game, red rocks amphitheatre venue is an interesting venue to see a gig if someone interesting playing.

I have had thoughts of flying to Denver, then getting the Amtrak trains through the Rockies and then continuing your journey to the west coast once you are out the other side.
There's one train per day and it leaves Denver around 7-8am. The next big city is Salt Lake City that you get to around midnight, or you can overnight it to Reno/Lake Tahoe or even go all the way to the Bay Area.

I just spoke to my brother about this a few days ago, he did the train from Denver to SLC. Said it was the best 40 quid he's ever spent.There's one train per day and it leaves Denver around 7-8am. We're in Denver for a conference in February, and our "Entertainment Manager" has been looking round for stuff do on our day off and it does seem exceptionally slim pickings. I'm alright (jack) as I'll go for a game of golf assuming there isn't snow on the ground, but my colleagues are struggling.
When one of the top attractions is "The Cannabis Museum" you know there isn't too much going on.
Having been to Vegas I'd probably just take the internal flight and have another day there instead, from what I'm seeing anyway.

Living in Colorado, I'd echo what bodhi says. Downtown Denver isn't a pleasant location any more.
Depending on what time of year you are flying over, you could rent a car and drive out to Las Vegas. Once you get west of the Denver metro area it's a great drive through the Rockies. Winter can be a mess in the mountains and, although it's a fairly short part of the trip, you could be held up for hours if it's dumping snow (and might possibly get to meet me if it's really bad out there
