I just can't seem to find the right one!!

Budget: £24k
Mileage: Under 25k
Mpg: 40+
5 Door
Decent leg room in back
0-60- Under 7.5s
Ideally hatchback but will consider saloon

I do like the new focus st 2.3 but put off by the ecoboost issues (I know it's more on the 1litres)

Important factors:

1- Reliability
2- Speed
3- MPG
4- Looks
5- maintenance costs

I brought a 1.0 focus , after having issues with previous one I added 24 months warranty onto the original 12 months for peace of mind , was £400 for the extra 24 months , cars been in for a few things , , complete interior strip down to reseal all the seams due to water leaks , new oxygen sensors & has cost nothing
2.3 st would be newish so would have warranty I’d of thought , & then just add a couple of years for peace of mind .
My warranty is through a Nissan dealer , thought £400 for extra 24 months was reasonable

Decent rear legroom is subjective as I find most hatchbacks cramped in the rear.

Trying to think of alternatives not mentioned.

If you want new/ nearly new then a Polo GTI might be an idea. Rear legroom wont be great though.

I'd take a look at the Alfa Guilia 2.0T (280 bhp). 0-60 in 5.7 so decent poke.

There are examples within your budget and mileage limit.

Decent legroom? That was a key element of a car search I have recently concluded, in order to accommodate a 6'3" person in the back.

The only thing I could find which fits the bill is a Skoda Superb. I didn't buy a particularly fast variant, but there are some pokey ones around. I find the 1.5 TSI DSG sufficient, due to its decent torque figures. So I bought one. It does over 50mpg on a run. Which I'm pleased with for a big car. It's quiet, refined, rides well, absorbs bumps nicely, I'm delighted with it. Drives a bit like a big diesel with all that torque - punchiest car I've had for joining motorways etc since a Merc E320 CDI.
