Had a service inc brake fluid change with a trusted garage (inc health check - green lights all the way) :

Noticing some occasional mechanical noises.. at the pedal itself (scrapy type sound).. occasional pop/click/crackle around the calipers

Do brakes ever 'bed in' after a fluid change or could cause such issues?

Take it back, something is not right. They must have done more than just a bleed. Maybe something silly like removing pads and refitting with retaining spring (if fitted) incorrectly, etc etc, just guesswork but no should be nothing similar to what you describe and brakes are brakes.

Something doesn't add up. Co-incidence or something else was done.

Why did you have the brake fluid changed? Just part of a service or another reason.
