You have been good in the past, can you help me again?

So friends are going to Rugby League Match in Las Vegas 1st March and in a bit of excitement I've booked tickets for my wife and I to join them....... Now decided want to include somewhere warm either before or after the match.
Flying from Manchester probably can manage 2.5weeks leave and really quite flexible.
We like water, snorkelling, beaches, nature, good food.
Only place we have been in America is New York and nowhere in the Caribbean.
Has anyone got some ideas I should look at as there appears to be a lot of options!
Thanks in anticipation of your usual!

Yucatan peninsula, Mexico and/or Belize. In the Caribbean, sitting on the 2nd biggest reef system and great snorkelling. Mexican food is great both areas have cenotes, underwater river holes, and mayan ruins plus some wildlife reserves.
For Mexico would try avoid the mass tourist meccas like Cancun and go to the more low key spots for a more real Mexican experince, or at least mix up where you stay.

We're in Vegas from 23rd - 26th Feb next year, then off to New Orleans for Mardi Gras, before finishing with a week on the beach to recover.
I looked into all sorts of options. I just couldn't bring myself to book anywhere in Florida despite it being the obvious choice. Everywhere just looks so built up and charmless. I spent hours over several weeks poring over google, google maps and streetview and just couldn't find anywhere that appealed. There are probably plenty of places that are nice to visit and spend time, but I couldn't find anywhere that looked like it would work for a beach holiday.
Someone on here described the coast around Panama City as "The Redneck Riviera", which didn't help. Then you've got to factor in the whole Spring Break thing. The beginning of March is definitely in that window
We ended up booking Eleuthera in the Bahamas. Exuma was strongly recommended on here, but I ended up sticking with Eleuthera as there is a much better choice of villas to rent. The only real challenge with this was getting there from New Orleans. Flights from Miami / Ft Lauderdale leave around lunchtime, which means a 6am departure from New Orleans. There is no way we're doing that the day after Mardi Gras, so we've got one night in Miami. No great hardship, but not ideal.

I'd go with this advice. Loads to do, and great VFMFor Mexico would try avoid the mass tourist meccas like Cancun and go to the more low key spots for a more real Mexican experince, or at least mix up where you stay.
Flights is proving interesting and probably will become the selection criteria.....
Looked at lots of different places and even cruises.
Mexico looks best fit at the moment, but don't want to go to party town.....
Thinking 4 days in Vegas then fly to Mexico for between 7-10 days.
Some places difficult to get to (Belize, Hawaii, Florida not really that keen, Caribbean Islands not easy to get to/from.
Trying to avoid spending too long in the air....
Thanks again everyone
