I have recently done an Aprilia RS250 which shares the same engine.

Alot of the engine parts are still available from Suzuki, a few years ago they did a Heritage parts run as well so may have some random bike bits in stock.

The Tuning works also offer a lot of aftermarket parts.

Keep the thread updated and post some pictures!

Speak with Sean at The Tuning Works, pretty much everything you need can be sourced by him.
Additionally, he runs a very good RGV/RS250 forum with very knowledgeable people onboard.

I'd love to see a thread of ine being restored. I had an RG250 a very long time ago. Mismatched lucky strike and Pepsi plastics as I was broke and ebay didn't exist so getting hold of bits was hard.

As other have said, The Tuning Works have specialist knowledge and a good range of std and aftermarket parts. He can organise cylinder replating if you need that service.
Robinson Foundry is a Suzuki dealer in Kent that has a good online shop , can show you what is available or NLA.
What have you got, VJ21,22 or 23?
