Fan no longer coming on when finished driving

Well I've parked at home after a high speed blast and the fan is on.
Definitely didn't come on this morning after the crawl to work.
Is it temperature dependent or just set to come on whenever the car is switched off?
I always hear what sounds like another fan in the bay come on within 2 miles of the start of my crowded roads 20mph commute.
Kept my eye on the temp gauge. Rose to 70c as I got onto the M4, further to 100c on the M25 then dropped to 75c as I opened her up coming in on the M3. Back to 90c odd once I came off the A316 and hit the side roads.
Does this seem usual? I'm guessing that as the 2c airtemp with wind-chill added must have helped lowering the engine temps.

I’ve noticed exactly the same thing yesterday and today. I’m so used to the fan coming, irrespective of driving style or duration, that not hearing it as I locked up was very jarring.
Ambient temps 3°, but the last few miles to work are a bit of a B road blast.
Will keep an eye on things.

I've just returned from a 3400 mile round trip to Tenerife and back.
Through France and the middle of Spain, quite often the fan wouldn't come on when I finished driving but it was always very cold. In normal and hot temps the fan works.
Tech at Alpine confirmed that it's temperature related, not automatic when you turn off the engine

Edit: not so sure. 7° this lunchtime and the fans haven’t come on but have driven in far lower temperatures and they have always previously done so.
