Now I've got one small kid and one on the way, I rarely get to use the 360 other than driving to work and back.
I absolutely love it but it's such a shame not to use it more so I'm thinking of more usable options.

After much thought I've boiled down to a couple of options
Porsche 997 Carrera S
Wait a bit for prices of 612 Scagliettis to bottom out a bit.

Any view or better ideas greatly recieved!

think you will be watining a fair bit for 612's to come down to carrera S prices, maybe 4 yrs.
How about a QP? Not far of the 911 in on road performance but so much more exclusive and distinctive. Or an M6 if you can get one.

can you fit baby seats in a 911? serious question.

Pretty sure you cannot get a baby seat in the back of a 996(assume 997 dimensions little changed).
How about a Gransport? Very generous room in the back for this sort of car and I can confirm babyseat goes in fine.

The 612 is an awesome bit of kit and so charismatic.

I'm not thinking of waiting until 612's get to 60k, just give them a year to take the first big hit and get them to £110k
They're currently hovering around £140k from a new price of circa £180k 6 months ago so I guess another 6 - 9 months should see them there or thereabouts.

I'm told you can get baby seats and small kind in a 997 fairly well, the main problem is that I think I'd find it a bit too tame after the 360.

I think the QP is a bit too "old" for me at the moment.

I'd have to say GranSport.

Or a 456 and save shedload (well, enough to run it anyway)

yes you can very easily (either Porsche own or other makes)
