Any recommendations please, not the likes of nintai or skinna more informal places such as erre urechu, but also do a decent and proper paella.

I think there are two questions here.

A great Paella is hardly haute cuisine and there are loads of places that can do a really good one, as the ingredients, primarily fresh mariscos, are plentiful.

It is unlikely that a top restaurant will be using Oysters and Great Scallops to make, say, one per month and may have to rely on frozen produce to fulfil the occasional order.

i dont understand but thanks. the paella in jaleo in vegas is imo excellent, and thats a decent end restaurant so not sure i follow your take, as those in spain should be equally as good.

the number of crappy paella ive had in spain proportionally is high, so probably not as simple as anywhere.

If you're looking at going once the chiringuito's etc are open again, head up the coast to the Finca Cortesin Beach Club near the Casares turnoff on the A7, great surroundings and service.
Although I've not personally had the paella as it's not my thing, my wife has with friends on a couple of occasions, and they loved it.
