I’ve just acquired an Aston (‘68 V12 Vantage S) and the manual seems to imply that I need to visit a dealership to have the headlamps adjusted for driving on the right. Is this correct? Seems strange, what if one arrives in the new country in the middle of the night?!

Yeah, technically you can adjust the headlamps (check the user manual) or you could just mask the headlights with some stickers you buy from a garage, or you could just not bother.

In 25 years of yearly trips to Europe ive never bothered....although to be fair the amount of night time driving during those trips has been limited as usually I visit during warmer months and have reached my destination before dark.

Yep I have also never bothered for 30 years and had no problems. If your worried about this just put the stickers on the headlights. I was at La Mans last week and saw a few had put stickers on the lights but 90% of the uk cars had nothing on them.

Early DB9s and Vantages had a lever to change the beam from RHD to flat, which was fiddly but DIY, but I don't think the elater cars had them.

No problems for me or our groups going to Alps or Le Mans etc

Little bit of night driving in AM each trip, used to drive over night in van to Alps - no problems all autoroutes

Only thing I do for Europe is put two hi vis jackets on parcel shelf behind passenger head rest.
