Plumbing - what's this grey pipe?

Please ignore the foul filthy mess...

Regarding the grey plastic pipe connected to a 15mm copper pipe via this compression connector in the photo below, if I remove the grey pipe, add a new olive then could I connect 15mm pipe into this compression connector in place of the grey pipe or is the compression connector some special size that interfaces 15mm copper pipe to some odd diameter grey pipe?

It looks to be just a standard 15mm isolator valve so copper should be a straight replacement?

What is at the upper end? Why do you want to remove it? If it is going to a tap, a simple flexihose (with or without an isolator) should do.

Taps need replacing but taps connect to this grey pipe that connects to this isolator. I want to use copper all the way. Hence my question is that isolator suitable for 15mm copper both sides or is the grey plastic say 16mm or something odd?

Thank you. The reason I ask is that I have had my fingers burnt when I learnt the hard way that 40mm waste pipe is not the same diameter as 40mm glue fit stuff

It looks like 15mm Hep2o pipe, it doesn't really need replacing, it will probably outlast the crap thin copper you get these days. If you do replace it, copper should fit into the compression fitting no problem, the fittings and pipe are all the same size.

That's interesting. So I could leave the existing joint in place (in the photo) then cut that pipe higher up for my new fittings? Does it require an insert before putting it in a compression joint?

yes and yes you will need a need an insert (i have in the past reused inserts with no issue, but they are cheap, so...)
