After a fantastic year for plums....now all jammed up, then apples....most sliced and frozen, its now corn. Last year I planted maybe 20 of them and most survived but what a wee furry beastie didnt get at, I got maybe a dozen decent sized cobs. This year I planted maybe 40 and they have all done well and have 2 cobs per plant and they are big. I cant eat them that quick enough before my furry friend gets in there.

So I cant think of anything else but blanch and freeze? And even then, they do get a bit soggy when defrozen and cooked.

Options???

How about preserving in brine, like the tins in supermarkets? You can't do canning but would a Kilner jar work?

Cook them slowly in a large pot along with the freshly peeled furry beastie. biggrin

You can preserve food with sugar, acid or salt - so you can make crystallised sweetcorn, sweetcorn jam, pickled sweetcorn and salted sweetcorn...!

(We'll do Curried Sweetcorn a la Grecque in lesson 2 lol)

I've just boiled some on the cobs and then scraped the niblets into freezer bags , saves space in the freezer.

PS Which furry animal ciimbs 3 foot up your sweetcorn plants ? Mice don't touch mine .. just earwigs smile

Mouse or field vole......staked it out last night in my hide with my shotgun and NVG's, bd never showed up. I got soaked.
