What Japanese Knife?

Chatting with a friend of mine last night and he's asked me for some advice on the above, he wants 2 knives, one general and one "a bit fancy for pairing etc, I'd like something Japanese", budget £250 for the 2.

We came to the conclusion that general everyday one will probably be a Wusthof of some kind, but my knowledge of Japanese stuff isn't great, so any recommendations? The Wustof is probably around £100 so maybe £150 for the smaller one? Unless there's a better pairing you can think of?

I used this supplier who I found to be absolutley excellent - I purchased the Moonlit Waves knife (with Euro handle) in the link and absolutely love it. I also bought the wetstone kit and ceramic hone

They were really nice people to deal with, it even came with some blue chefs plasters which I thought was a nice touch biggrin

Another vote for cutting edge knives, lovely company to deal with and something for every budget.

On the assumption the western knife is a typical chefs knife and the Japanese more specialised I’d be looking at a Nakiri.

Why japanese knives? Very different than western knives if you are not used to it and absolutely no benefit to your cutting skills.
