Other than Knaus does anyone know who else makes a van conversion with circa 2.0m headroom?

I found the transit based vans (e.g Bailey Endurance) had over 2.0m headroom when I looked at them during the NEC show a couple of weeks ago.
I also found them to be very narrow though!

My high top Transporter LWB has 2.3m of headroom. It's also got a full length and full width double RIB bed - not the usual 10-15cm narrower and a few cm shorter rock and roll bed.

There's many glass fibre roofs for Transporters.

It is a Bilbo's and you can choose height or roof.

Vans based on the Fiat Ducato/Citroen Relay/Peugeot Boxer are 1.9m internally

The VW Crafter (Or MAN variant) van has a "Super High" variant which has a load space internal height of 2.08m but I guess in a conversion you would lose some of that to insulation.
