Should I leave the meat juices in the pan before roasting?

Yeah, just leave them. They can only add to the flavour you recover from the pan for gravy or whatever.

Thanks, I am making gravy, but didn't want it to burn.

Get rid.
You'll have enough juice come out for gravy and when it rests.
That's just gonna burn and stink.

Left the juices in the pan and took it out the oven at 46 degrees. Looks like it will make great gravy. Beef is Dexter beef from a local farm in Ayrshire.
