Adive 3 days in Bangkok

Hi all,
Looks like I am off to Bangkok next week and 3 full days free, any recommendations on what to do and see, i've not been for about 15 years and the last time we spent most of our time stuck in traffic. Any recommendations on decent food places and bars to see the sunsets?
I'll probably be on my own for days 1 and 2, staying in the Sukhumvit area if that helps.

What can qualify as the Sukhumvit area is vast, similar to being told downtown or central so its worth checking the address to see what you have within walking distance.
you are If your near the Asok/Asoke area then Terminal 21 has a large food court on the top floor, plenty of good choice for about £1 for a small meal if you want to sample lots of different dishes. We used it to load up with a massive breakfast/lunch before heading out for the day.
Phrom Phong is the area for upscale dining and drinking options, plenty of choice within walking distance from the BTS station. We saw everything from Tibetan to Mexican but Korean BBQ and Japanese izakayas seemed very popular.
Octave and Tichuca are popular rooftops bars for sunset, to be honest you are spoilt for choice in Thong Lor, Phrom Phong and Asok for rooftop bars. Bangkok must be one of the best cities in the world for rooftop bars and a good chunk of them are in the general Sukhumvit area.
For sightseeing honestly nothing, it's a vast modern area filled with skyscrapers, hotels, condos, malls etc. Use the MRT or BTS to get to the historic areas like Chinatown, Song Wat Rd, Talat Noi. Grand Palace, reclining buddha and Wat Arun are all walking distance from Sanam Chai MRT station.
Be sure to visit Chinatown in the evening and hungry, cannabis is now legal if that's your thing (within your home or specific smoking bars etc)

Questions IF i just do the boat trip is it worth seeing Grand Palace → Wat Pho → Wat Arun individally?

I am currently In the area around Asok Sky train stop- Sukhumvit Soi 18. Your plans look sensible for a three day trip. I would add that the best and quickest way to get around is by Skytrain or MRT(Underground train). The MRT is very close to Asok Sky train so really handy.
The best market without a doubt is Chatuchack Weekend market- open during the day Saturday and Sunday. I was there today and it was not as busy as usual, which is nice. If you feel adventurous you can use the locals riverboats - they have an Orange or yellow flag and are very cheap. A nice bar on the river is called Viva, Get off the boat at the River City Complex, which is opposite Icon Siam.
Soi Cowboy is amusing but you need to go in the evening- there is actually a decent pub at one end called the Penny Black which has great live music, and you wont get hassled by ladyboys as you doubtless will in the rest of Soi Cowboy. Also consider Soi 11. It's pretty lively and there is a cool rooftop bar called above 11 with no entry fee and stunning views. The Iran situation is a problem for me as I am flying back via Dubai this week- maybe not now, but its no great hardship to stay a bit longer.
It's hot and humid, 35 degrees daytime. Have fun !

1 For 200thb I’d say it’s worth it. Took us an hour to get through.Should I get fast track for Bangkok aoirport?

3 We had a private guide that took us on the river boats, tuck tuck and Skytrain
It was our first time there so we didn’t really no what we were doing. Found a great bar (Jimmys Bar) opposite Iconsiam right on the river.

Thats a lot in a day, you might be fine with it but it will take you all day pretty much non stop. Watch out for "temple closed today" scams on the way.

Speedy / VIP entry is worth every penny IME. Last time I was there stepped off the plane and was max 15 minutes to the car. Then driver took us straight to Soi 28, which took maybe 40 mins. Sub 1hr door to door.Should I get fast track for Bangkok aoirport?

Flights could still be delayed yes. Or cancelled.

I would also agree your Saturday itinerary is a lot, too much IMO. Grand Palace, Wat Pho & Wat Arun will take up 6-7 hours. ICONSIAM could easily take up 2 hours its huge! Same with Chinatown, even if you don't stop for food or drink you will lose a few hours taking in all the sights and navigating the very crowded streets. Unless you plan on heading out for 6am I don't see how you will have time to do all that.
I'm guessing your staying in Asok, you could move Chinatown to Friday afternoon. 15 minutes on the MRT from Sukhumvit, Plaeng Nam Road is a great place to grab a beer and people watch. Shanghai Mansion has a nice bar and they often have a band on in the evening if you want to escape the chaos on Yaowarat. Grab some amazing food either on or around Yaowarat and head back to Sukhumvit.
Soi Cowboy is ok if your passing by and just want to walk down and tick it off your list but I would not go out of your way to see it . As someone else mentioned Penny Black is a good spot to people watch outside and drink inside with being hassled to buy lady drinks etc. Scruffy Murphy's Irish Pub is at the other end of Soi Cowboy on Soi 23 if you want another 'normal' pub.
I agree on considering Soi 11, which would be a much better option compared to Cowboy if you want somewhere lively to grab a beer. Yes it's touristy but you do have some decent bars like Hemingway, Above 11,Paradise Beach Bar and Havana Social.
If you like craft beer then check on Burbrit Craft Beer which is on route to Phrom Phong, Tribe Beach Club is an option if you want somewhere to chill for an afternoon.

I was in Bangkok in October, we had a private tour guide who was great. She booked electric Tuk Tuk’s to get us around town which was great. They dropped us off and waited for us wherever we went. Not expensive and a great way to get around…
Two other people have used her since and found it very good.
