I've been watching too many YouTube foreign food reviews and now feel like getting away for a 6 months or so. Current thinking is Mauritius, Sri Lanka, somewhere in South America - but I haven't been to any of those places and am massively open to suggestions. I'd set off after this years sailing season with a target budget of around £1,750/$2,300 a month to include everything (I'm not looking for a luxury getaway).

Sri Lanka

Is beautiful, and small so you can spend time on beautiful beaches one day then ancient cultural sites the next and lush hills the next the food is AMAZING, the people are lovely. Wildlife is everywhere, elephants & monkeys especially. Trains are cheap easy to use, so are busses and taxis and TukTuks. Most people speak a bit of English, or someone close by does.

VERY cheap once there- Trincomalee and the north in general are my favorite i think.

If you are looking for food, Rice & Curry is the national dish, this was about £4, in fairly tourist friendly restaurant

I’d be going to Thailand.
Just spent three weeks there and could happily tour around and maybe pop into Vietnam.

Love the place - Langkawi is one of my favorite places in the world. But I'd like to do something new -and maybe a bit more rugged.

For 6m won't SL get a bit boring? Not that it is boring, just its quite a small place.

South America or Africa might give you more travelling opportunities and variety.
