My 2010 R56 petrol mini (N16) had red/pink coolant in it when i bought it and thats what I've topped it up with since.

However, I believe it should be blue as in my 2012 R56 diesel (N47N).

I've just drained the 2010 changing the coolant pipe over and can refil with either red or blue (I have 5l of both).

Is this a chance to change it or just stick with what was in it?

The colour can be misleading; it, in itself is no guarantee that it will be the correct coolant (without knowing the make). There is no agreed 'standard' for the colours, and different manufacturers may use whatever colour they choose.
Use an online look-up to get the correct spec.

Coolant is cheap, if it were me I would drain, flush

Fill with correct specified stuff - then drain and fill again

This is what I did in the end two flushes and it’s sorted.
