Can I just key and re-varnish or do I have to strip the old finish off completely?
(Bathroom door that's been splashed)

I’d sand and varnish the bottom of the left hand stile where it’s badly marked, as a trial; if you’re happy with the result sand it down again along with the rest of the door and varnish the lot. If it looks crap, it’s stripping time or paint the door with a bathroom suitable paint.

Depends what result you are happy with.
Minimum is to remove loose varnish and sand.

More prep usually gives a better job, but where the wood has grey in it due to being wet, that's hard to get back to new looking whatever you do.
