In the late 2000s I was at a car show, and one of the stands I visited had a very performance focused car. Not quite a track toy, but definitely not a comfy cruiser.

It was enclosed, but it had something more akin to a cockpit than a cabin. The passenger seat was behind, but to the side of the driver's seat. So a sort of staggered tandem arrangement.

It was a low volume manufacturer, and they were encouraging people to come and try the car at their HQ (I can't remember which country). A missed opportunity, but there was no way I'd have been able to buy it so I wasn't going to waste their time.

It's bugging me that I don't know what car I'm describing! Can the hivemind help out?

The OP described a closed 2-seater, which unfortunately neither of the above suggestions match.

Except the fact that the Caparo could come with a detachable roof

Ai says you are talking about the Caparo T1

Design and Cockpit Features

Formula One for the Road: The car looked and handled like a street-legal F1 car or a Group C endurance racer. It lacked any standard amenities, like air-conditioning or a radio, to maximize weight savings.

Staggered Seating Configuration: To keep the carbon fibre monocoque chassis incredibly narrow and aerodynamic, the interior featured a tight 1+1 staggered tandem layout. The driver sat centrally, while the passenger sat snugly behind and slightly off the driver's left shoulder, looking right over the driver's steering wheel.

The Canopy: Passengers climbed into a tight carbon tub covered by a sliding fighter-jet-style sliding canopy.

Extreme Performance: Powered by a 3.5-litre Indy-car-derived V8 engine that revved up to 10,500 rpm, it produced 575 horsepower. Because it weighed only 470 kilograms, it had an absurd power-to-weight ratio that outpaced standard hypercars.

HQ Test DrivesDuring its launch phase around 2006–2007, Caparo was heavily pushing factory-direct sales and famously invited prospective buyers and motoring journalists to their HQ and assembly facility in Hampshire, United Kingdom, to test drive the vehicle on a nearby track to prove its capabilities.

Staggered tandem made me instantly think of a T1 with the optional canopy.

The winner is... Caparo T1 with the optional canopy. Thank you all.

Looking at the price of them, I'm now amazed that they offered me a test drive!

Dodged a bullet probably... if reviews at the time were anything to go by, they liked to catch fire.
