We plan to hire in a couple of countries where we don’t have local companies, so using an Employer of Record seems like a possible way to go.
The EOR would become the legal employer and handle the local contract, payroll, taxes, and benefits, while we would still manage the employee’s actual work.
After reading more about it, the EOR route seems to make sense for what we need.

What I need help with is understanding how well this works in practice once the employee has actually started. The setup sounds straightforward, but there must be a few things to consider.

How do they deal with late salary payments, benefit problems, or contract changes? Also, what happens when an employee needs help with a local employment or compliance issue?

For anyone who has used an EOR, what would you check before signing? Were there any costs or service problems you only discovered later?
