Hotel Suggestions in Devon

Give us some actual destinations and I can certainly help with a few if we have been in the same area. It's the second biggest county in the UK....
Dunster (It's somerset, but damn close) - Luttrel Arms - lovely old building with one of the prettiest (with views of castle) pub gardens in the South. Great restaurant, plus pizzas and prosecco bar in the garden.
Shaldon - The Ness - its Hall & Woodhouse, so don't expect fine dining, but the rooms and views are superb. Lovely bars near by too. And you can take a dog.
Fisherman's Cott, Near Tiverton. Lovely riverside garden/pub/restuarant. - Again, don't go for the food, it's just fine, go for the garden and river. (can you see a pattern here?)
Culm Valley Inn, Culmstock - By the river, again, amazing Italian chef that does steaks to die for, and a great sunday roast. Lovely little village. Again, it's all about the alfresco.
Dartmouth - The Royal Castle - old characterful hotel, right in the harbour. Dartmouth has a lovely grown up feel, and if you want the beach then Blackpool Sands are just down teh road.

I live in South Devon, a few miles away from Shaldon mentioned above. I spent a few years in a village close to Dartmouth (Stoke Fleming) which is on the road to Blackpool Sands also as mentioned above. Both of those are OK to visit, although there isn't that much to do in Shaldon really. There is a lot to do in Dartmouth though. Highlights for me would be a decent seafood restaurant, and I used to drink fairly regularly in The Cherub which dates from about 1380. Allegedly.
There are a couple of places further up the coast that would be worth a couple of days stay that I like and where I have spent time. Sidmouth would be one of them, and Beer another. Beer in my opinion is really, really pretty. I won't recommend hotels in either as its years since I've stayed in one overnight, but Google will give you loads of suggestions.

Agree with the Luttrell Arms, stayed there for 2 nights previously and was really really nice. Dunster is lovely, especially in the evening when everyone has gone home and Minehead wasn't even that bad for a mooch along the beach. Just back from a few days in Devon and stayed at the Mole Resort in Umberleigh - we found it through booking.com and expected a hotel but didn't realise the size of the place - the hotel side was great, rooms were huge - the self catering lodges they offer look great value - the staff were brilliant (all young but actually wanted to be helpful)
biggest issue - finding places that serve food after 4pm on a sunday and realising just how wide my RS4 feels through the country lanes...!

Last time I visited, I stayed in Appledore, at The Royal George. There is some parking tucked around the back....

Very good it was too.... not too far to get to Bideford or Barnstaple and also fairly close to the bigger beaches (Westward Ho! and Saunton) if the weather behaves.

We've stayed at the Berry Head hotel a few times just outside Brixham (walkable into town). Absolutely superb coastal walks straight from the hotel, stunning location. The hotel's a little rustic but they come up with some decent offers from time to time.

My favourite Devon hotel is probably too expensive: the Endsleigh, owned and run by Alex Politzzi (of 'Hotel Inspector' fame). Very spenny. Very nice. However, the Landmark Trust has cottages in the grounds that have the use of the hotel for meals. There are stunning views over the Tamar. So for a fraction of the price, one can have most of the experience.
In the same area, the Arundell Arms. It is a pub with rooms. The rooms are rather basic but the pub serves excellent food, either in the bar or the larger restaurant. The lounge is excellent for pre/post-dinner drinks. Very comfortable. The owners are an enthusiastic South African and his lovely wife. Nothing is too much trouble. Very dog friendly.
If you want an off-the-wall suggestion, then the Bodmin Jail Hotel is a unique and rather comfortable experience. Bodmin itself is a horrible pit though.
These are all West- and mid-Devon.

Last time I was near there a few weeks ago, Bodmin was in Cornwall.These are all West- and mid-Devon.

I stayed there for a Devon shoot followed by a Cornish one.
I had lunch at the Gara Rock hotel last Saturday but haven't stayed there. It's expensive but in a great location on the coast path not too far from Salcombe. There is a lovely beach, Rickham Sands just below the hotel.
Soar Mill Cove Hotel is another luxury hotel close to Salcombe if you're feeling flush.
Torquay has its detractors but the views across the bay, across to Brixham are amazing. The Osborne and Imperial are both a bit tatty but good value and close to Meadfoot beach.
If you are feeling loaded then Burgh Island Hotel is poor value for money but unique.

Were you feeling extravagant, Gidleigh Park is beautiful. I have read that it is far less formal and stuffy than it used to be.
