Carving set restoration - who to use?

Following a house clearance we have gained a carving set. Quite old, from googling the maker is would appear to be late 1800/early 1900.

One of the knives has a twisted and extended handle and needs complete restoration - the other pieces need various levels of work to bring them back.

I've never had experience of this sort of work so haven't a clue where to start looking, other than the obvious Sheffield location.

Over to the PH masses for suggestions please?

A chap called Gareth Heaton wrote book on sharpening knives, and other things, he has a shop in Ilkley, he may not do restorations as such but likely has a vast knowledge of someone who might do.
