Where autumn break /is last minute pricing still a thing?

Thinking of a break somewhere in Europe the first few days of October - we have the full week off.
We like autumn, mountains, walks, nature above city break etc. Not too fussed around warmth - but perhaps a dose of warm hills in Italy or Spain could be a good thing.... Would take off the beaten track over mass-tourism...
What suggestions of locations in Europe, bearing in mind that in October many mountainous areas are both closing down for the season and experiencing changes in weather.
Also, it seems that 'last minute' is less of a thing now with prices less discounted or attractive than before. I am assuming more folk are travelling on shoulder seasons now?

Soller Valley, Majorca could be a good shout - some great walking, old word charm, good food, and with the coast close to hand if you fancy that as well.
We stayed in Fornalutx in October last year a loved it. So much so we are booked to go back towards the end of October, though based in Soller town itself this time.

I think it must be 10 years since we went, but the Picos de Europa could fit the bill. Potes would probably be a big enough town to still have things open. It looks like where we stayed is still going (link below). It's in a little hamlet about 10 or 15 minutes drive from Potes. IIRC we got a book of walks (in English) from Amazon and used that through our week. It was super quiet out walking (even mid-summer) and we could go for hours out on some of the trails without seeing anyone.

I did also think of the Alta Badia region of the Dolomites but having quickly looked, a lot of the lifts close on the 4th October.

I was preaching to the converted then. What about somewhere like Tuscany that would be too hot for walking in the summer?It's a semi-package option but perhaps gives some inspiration for location?
