Just purchased a De Buyer carbon steel pan on a bit of a whim. I know I have to season it but when it comes to cooking how sensitive is the seasoning likely to be? For example, if I fry off a pork chop and then make a cider cream sauce in the pan, is the cider being acidic likely to strip the seasoning? Normally I'd add the cider, let it cook off a little and then add the cream, would I have to put the cider and cream in at the same time?

It takes oven cleaner to strip a well seasoned pan so I would hope a splash of cider would be ok... unless its like the stuff my neighbour used to make.

Thanks, did seem a bit crazy that carbon steel appears to be promoted a lot but would have been very limited in its use!
