Anyone know if those cameras that they stick out the back of a merc sprinter (top 1/4) work at night

I'm guessing you mean ANPR and the answer is yes they do.

ANPR aren't speed cameras.

ANPR are the number plate recognition cameras. I hope they can't also work out your speed!

So do you have to be pulled at the time or is it in the post job; and how the hell do they get your face to prove who was driving

They usually have a few traffic coppers up and down the road. The plate is read, automatically searched through a few databases and then the dispatch cars are informed. These are good as they are linked to police systems so if a car is stolen, reported at a crime scene etc then they can be caught. I guess they can check tax aswell. These guys arent interested in speeding - well not stupidly fast. They are coppers, they hate speed cameras just like us.

Let's hope you're right. To be honest, the theory behind these ANPR cameras is a good one - to catch numptys who deliberately don't tax and insure their cars for starters.
