The 360 comes with a lead that splits into 2 types of output, a basic AV (yellow video and S-video, red and white audio)or HD (+ optical audio). I'm confused by the HD which appear to me to be component video leads.

If I want to connect my Projector or my HD TV to it I would have expected to use either DVI or HDMI. Sure I can use the component leads but arnt these inferior in quality?

at the moment, component and vga are the only "HD" leads available. Component on my pio plasma certainly "looks" hi-def, and says its 1080i.

dvi and hdmi leads are coming out apparently,

I assume this decision was made due to the US market. They have had 720p for years, way before the advent of HDMI and DVI, so it's just a question of supplying the most widely used connection type. The signal from component is actually very high quality and you'd be hard pressed to spot the difference from a 360 in an a/b comparion imo.

Component can indeed provide HD, either at 1080i or 720p. GT4 on the PS2 is also able to output at 1080i over component cables.

What's the quality difference between 720p (progressive) vs 1080i (interlaced)? I can't see much difference myself.

I've also noticed the front/rear view car models look out of perspective (the views where you are above & behind the car).

I think interlaced provides a picture which is less steady. I didnt notice the difference, but whack the definition up to 1080i and you will notice an improvement in the resolution.

Component video leads are analogue, DVI and HDMI digital.

Digital is not neccesarily superior to analogue, it depends on the capability of the source device and the display.

HDMI hasnt gained much market penetration in the US as yet and thats the Xbox's primary market so it gets component for HD.

With regards to 720p v 1080i, the number refers to the lines on the screen so a 1080 picture contains more information (detail) than a 720 picture. However the p and i refer to progressive and interlaced. With a progressive picture you get all 720 lines every cycle and with an interlaced image you get half the image every cycle, in HDTV's case 540 lines. The upshot is that both standards are of equivalent quality, near as damn it.
