I get told off if they are not... but sometimes level looks wrong to me.

Generally yes. But of course it "should be" whatever looks correct.

Ditto that. However in this shot you can see that the Pacific Ocean is definitely sloping. I tried levelling it but then the rest looked wrong, doh.

As a tester John, can we see it with the sea correct? I think it would look much more "right" with the sea as it should be! (iom)

As a rule, yes - but as with most "rules" in photography - sometimes you get better results by breaking them.

Due to the angled shot, if you correct the perspective (left to right) and then crop, the sea can be leveled and the beach would still look as it is. You would loose a portion of the shot at the top and bottom though.

My fix would be to clone some sky over the sloping bit. The Irish waterskiing team will be disappointed though..
