The ideal car mag doesn't exist IMHO.
Of the general car mags, I like "Evo" the best, "Car" second. But Autocar isn't bad as a weekly fix until the next Evo arrives.
In terms of specialist reads, I like Circuit Driver which is subscription only and is of interest for people who like track days.
The Porsche mags are not ideal, but I tend to read them all anyway. The publishers/editors or whoever do tend to read this forum, so I will be careful what I say. But the standard of writing is not as slick as that found in Evo or Car for example. The Porsche mags aren't quite as well put together as Evo et al either, but they are lower budget I suspect. I'm not just saying this, but I think that I could write as well as some of the the journos in the specialist Porsche mags. I wouldn't use as many cliches for a start.
There are signs of improvement though. Total 911 is a welcome addition. I'm not mad keen on the mag, but I'm glad it exists. I subscribe to it. They do feature some absolute junk though. They had a 996 Turbo in this month that was horrid, just a pimped-up max power horror with terrible wheels. For heaven's sake, this type of car has NO PLACE in a 911 mag.
GT Purely Porsche has scored highly for getting the excellent Chris Harris and Colin Goodwin (both of Autocar) to contribute. I love Goodwin's ramblings about his 1970's 911S. I love even more Harris's column, plus his diary of keeping a 993 GT2. He has writen some good articles as well, e.g. last month's one on the standard 993 he has bought to go alongside his 993 GT2. His comparison of the GT3/993 RS/993 GT2 was also interesting and well written.
So, none of them are perfect, you just need to try a few.

Personally I read Evo and GT Purely Porsche. Last month's GTPP was pretty ropey in my opinion, but others have been very readable indeed. They've usually got lots of glossy photos if that's your thing

Evo is still cover to cover reading for me, although I think some of their driving descriptions are fiction - I don't believe some of the tail out at every roundabout stuff.
Of the Porsche mags, Total 911 is the best on the block at present (although hit and miss), GT getting to be an occasional buy, and 911 & Porsche World, summed up perfectly as "old man's mag"
