Very subtle use of spot colour, almost too subtle?

I see what you mean though, about not knowing whether you like it or not. I like it because of the dog, not sure about the mess of clothes, but then again without them it would just be another pic of a dog

How do you get the effect as you have in the 2nd pic with the dog being the only part in colour? Is this photoshop trickery?

It's a bit busy for my liking. There's no focal point as it were - lots of stuff distracting. In fact, I find my eye drawn to the gap above the clothes above the dog.

I guess the spot colour helps in the second pic.

I think the satchel/bag on the left foreground is distracting too.

Would a crop help? Maybe it'd just become a picture of a dog then?!

You're absolutely right, a couple of dead pheasants on top would set the scene.

I used two dogs, a liver spaniel and a black/white spaniel. The clothes were selected to be grey...

I believe I have been rumbled...

Mind you, I had to borrow a sepia spaniel for the last one. They're very hard to find, y'know.

Just to save you going mad its sometimes called colour popping.

Another way is to duplicate the layer ... desaturate it then use the eraser on the top layer to bring through the colour from underneath. Basically you rub out the black and white layer where you want the colour to show.
