The dangerous problem with corrosion aflicting the area between two disimilar metals on brake lines was with alloy banjo fittings being used with steel braided lines.
Zinc plated bolts separated by copper crush washers wouldn't be a problem - they will look minging after a year but they won't be dangerous. You really do have to penny pinching in the extreme not to go for a full stainless steel set (i.e. including the bolts themselves).
Wezmoto is a nice enough one man band specialising in chatting up manufacturers and getting rid of their old or (as in this case) cheap ranges on e bay.
All the manufacturers (including Goodridge) offer full stainless sets. It has to be said HEL have been rather better at getting their product in the magazines in the last 2 years.
