I have two ways of doing this. For a larger older camera I got a flat strip of Ally about 1.5mm thick. Cut a slot over most of it’s length producing a U shape. The slot was cut to fit snugly either side of the head rest fixing shaft. Then put a 90 degree bend along each long edge to give it some strength. At the bottom of the U a hole takes the camera fixing bolt. At the other end two holes accept a closing piece to fix it in place after sliding it under the head rest.
For a very small, digital camera I fabricated a small aluminium box to hold the camera with a tab that bolts to a short flat bracket pinched under the passenger sun visor. The bracket is always in place so I can attach the camera in about 30 seconds with one thumb fixing.
The proper way of doing it is to buy a clamp that fixes to the roll cage. For any sort of motor sport you need a fixing and an additional tether for when the fixing fails.
