How do I unsubscribe from threads I've replied to?

Assuming you mean with in the Gassing Station...

There's no "subscription" to certain threads - either you read them or you don't.
The My Info/Contributions function just lists the threads you have replied to.

Unless you mean you've bookmarked every thread you've got involved in? If so, just go to My Info/Bookmarks and delete the ones you no longer want bookmarked.

In line with that, I've often wondered if being able to add a thread into "My Stuff" even if you've not replied on it would be useful?

Great example, I enjoy reading Flemke's F1 thread but have never had questions - so in the end I simply put in some rubbish comment just so it then appeared in 'my stuff'.

There's a bookmark button in the top left that adds a page to your bookmarks that appear as a tab under What's New -> My Stuff as a separate tab.
