Am I correct in thinking that a 'normal' DVD has 4.7gb of formatted capacity and a DVD I'm trying to 'backup' which has 8gb of data on it is a double sided disk?

Think they have 2 tracks on 1 side at different levels but are called double sided.

General rule of thumb (i.e. too lazy to look it up):
Single Layer DVD = 4.5Gb
Dual-Layer DVD = 8.4Gb

To write a dual-layer disk you'll need both the media (obviously) and a Dual-Layer DVD writer, most modern systems come with one fitted.
