This setting has worked for me for years now up to temps of 35 celcius and higher.
Temp senders (torpedoes) on the return hose:
Half speed 60 celsius
Full speed 80 celcius
Like i said, i use this setting for years now during our summer trips to Italy (mountain passes, loads of them) and several trackdays. Never any problems with the temps, they normaly are about 85 / 90 on the dash. During trackdays and autobahn speeds they are a bit higher but never anywhere near the red.
I wouldn't set the halfspeed setting much lower than this, i can remember a comment from Peter V8S Humphries that you should not overcool the engine.
This is a must-have piece of kit, excellent value for money.

Here Here!! I have just fitted David's two stage kit to my 500 and the under bonnet temp is so much better. I have also fitted a manual on off tap under the bonnet to the heater pipe and the cabin temp is much much cooler. 
I can now get cold air through the dash vents Thanks for the replies ..... mine isn't actually a Modwise kit, I have had one of those but this is a two stage Mark Adams 'electronic' version fitted by Austec.
It does effectively the same thing but the digital control unit is mounted in the car - in my case in the Glovebox. I have adjusted the settings down from those Austec set as I was used to it running cooler.

I wouldn't set the halfspeed setting much lower than this, i can remember a comment from Peter V8S Humphries that you should not overcool the engine.
You need to get the Oil to about 80oC to get rid of the condensates in it I believe.

How is the half speed achieved, electronically ? Why did you drop the mod-wise one, out of interest ?

You shouldn't overcool the engine, but if the stat is fitted and working correctly it'll take care of that. Fitting too cold a stat isn't a good idea though.
The main issue with setting the fan switch too low is that if the switch is in the top hose and the stat is hotter than the fan on temperature then you can end up with the fans running all the time.
Really the ideal answer is to fit the otter switch in the bottom hose where you get a very good indication of whether there is sufficient air flow and hence whether you need the fans on, and then you don't have this problem at all. But with the otter switch in the top hose you need to make sure it's set to come in only when the engine is significantly above the normal running temperature.
