You'll make the bike steer a lot slower, may foul the swingarm for the potential benefit of more grip due to a bigger contact patch. TBH, not sure you should bother going up in size.
I went down from 190 on my gsxr to 180 and it's fine on the Corsa's, not having any traction issues. I did notice much quicker turning at lost a little stability at the end of Park straight on the brakes (rear wandered around a bit).

No benefit at all. It'll make it harder to turn, and you'll not gain any extra grip. As far as I know (and it worked on my Mille and Tuono), you'd be better off going down a size. I dropped from 190 to 180 on both of those bikes and they both steered faster and felt a lot more stable as a result.
i found on my 916 it gave me loads of extra confidence going from a 180 to a 190 i felt i could really get on the power earlier out of corners. i think it is down to personal preferance so try both out and stick with what feels best to you. but if you are not exploring the limits of traction with the 180 you are not going to notice the extra grip a 190 gives you. And it doesnt make the bike turn in ALOT slower but you can tell the difference.
interesteing.. Ive moved from a 2002 daytona to a newer 2006 daytona, and the only major difference is the single sided swing arm ,and the increaes 190 profile rear.
And thinking I could jump on and ride - Ive found it much harder to turn and feels loose. will a 180 fit straight onto a 190 sized wheel without issue then?

I switched my 916 to 180 (had 190 when new) as it has a 5.5" wheel and the 190 doesn't seem to fit 'right' on the smaller wheel so it ends up with a distorted profile.
Bike turns better with a 180, so much so that when I recently bought some new, lighter, wheels I got the 5.5" rear for a 180 instead of the optional 6" for a 190. It doesn't need the little bit of extra contact patch the 190 gives and the turning is better with the narrower and relatively taller tyre, although I think you can now get a 190 with a 55 profile which some say turn better than the 190/50.
My advice is don't fit the bigger tyre, especially if you don't have a 6" wheel, there is no advantage, it won't fit right and will wear flat quicker in the middle, whilst being more difficult to use up to the edge. 190 = bling.
