Crimson Skies is supposed to be very good. Not really a sim though.

Not exactly a sim, but Blazing Angels: Squadrons of WWII might appeal

It's hardly a flight sim though, those games have more in common with First Person Shooters except you aim the plane instead of a hand with a gun.

There aren't any real flight sims on consoles, that is probably the only domain where PCs still rule supreme over consoles in the gaming world.

If you want a flight sim, a proper one that is even remotely realistic then you need a fast PC and one of the following.

Noncombat
MS Flight Simulator IX or X (whenever they decide to release it)
Xplane

WW2 combat
Il2 Complete edition (due to be superceded within a year by a new engine called Storm of war)

Modern combat
Falcon 4.0
Lock-On: Modern Air Combat

I totaly agree, hence i said it's not exactly a sim. However you find that people often ask for a "flight sim" simply because that is the name given to most games involving planes etc.
I have never heard of anyone asking for a "good flying game", it's almost always "any good flight sims?".
They may or may not always be looking for a game that takes them half an hour to learn how to start the engines and take off though.
The OP asked for a WW2 dog fighting game on the XBox and that's about as good as it gets.
Given the question, i still think it would be a better option than possibly having to buy an entire new PC and proper simulators.

If the Xbox is modded and is dual-booting in to Linux then perhaps Flight Gear? Not the most uber in terms of graphics output but it's free and seems to get goodish reviews from those that play with it.

As for a straight up xbox... erm... the other few posts give a few actiony games that use planes but I'm affraid I've never come across a flight simulator for a console.
