Did the course about a year ago up north. Have the RR and the half day went as follows:
Brief intro to the event and safety etc
Out into the equivalent car to the one you own (in your case the sport) provided by LR
Overview to the cars capabilities on and off road
Then onto the course with each part being demonstrated by the driver first:
* Onto main roads to see how the car handles on normal roads (public roads, included things like putting the car into reverse at 70mph to see what would happen
* Steep incline and drop using the hill descent control system only (no brakes or accelerator)
* Off road course through some trees and inclines
* Water and mud course over dams and logs (water up to 0.5m)
* Onto a grass field and brake control over wet grass
* Back onto any aspect of the course I wanted to do again
* Back to base and a gerneral discussion of what the day was like and that was a wrap
Great fun and never used any of it since!

I got a half day with the sport as part o fthe deal when I bought it. Did it up at MK. If you can it's worth paying the extra to upgrade to the full day. You'll get far more out of it as in the afternoon you go out in the Defender & you get to go over rougher terrain than you do with the sport.
If you are lucky enough to get offered one of these, please try and take the time to go to the centre in the Malverns. 8,000 acres to play with and this is where the G4 lot do their training. (along with the SAS I believe, although not together obviously!)

Cannot do level one, but if you would like to do another half day I have some spare sales / promo vouchers left I think (if I can find them!).
