The main difference is tabbed browsing. The MS site will tell you that there's loads of differences and enhancements and improvements, but that's the only one that really impacts me day-to-day.
I've been using it for about six months through the betas and release candidates and now the final release, and it's fine.
It does render some CSS differently than IE6 did, and that catches out some sites that were written explicitly with IE6 in mind.
I slightly preferred firefox to IE6, and I probably slightly prefer IE7 to firefox, but there's not much in it.
Sorry if that's a bit non-committal, but for me a browser is a browser is a browser, and I don't think any one is miles better than any other one.

I wrote a quick review of it here:

Summary: It's ok, but I'll stick to Firefox thanks very much.

You're right about the memory use (64MB right now with 4 tabs open), but I've not seen any marked increase in processor use nor any stack overflow problems, so I wonder if they're specific to your machine?
One thing I found is that although the menus aren't displayed by default you can still access them as though they were, e.g. ALT+F brings up the file menu, ALT+T brings up Tools, etc., and just pressing ALT on it's own displays the menu bar.
I agree with you that it's not really moving the game on much, though.

It could well be a combination of the slow DNS look-ups that plague our corporate LAN and this laptop which desperately needs a re-build.
Good spot about the menu shortcuts!
