My oil pressure indicator starts on 45 when cold and typically does not move one bit throughout a journey. Is this a problem with the gauge, the sensor or the oil?!

I'd get the sender checked, but my gauge behaves in a very similar way - after startup it goes up to a certain pressure and stays there, hot or cold. It's done it for 5 years. I've had the pressure checked by a specialist several times in an effort to fix mine. In my case the gauge is sticking

Just make sure your oil pressure warning light works as this is a secondary backup.

Check that your gauge is not wired up to your oil light! Ifthe gauge is OK it seems to be responding to a on/off signal.
