Arizona in Jan/Feb

My wife and I are flying into Las Vegas mid-Jan '07, (thanks to a brilliant Business Class promo deal with MAXJet out of London Stansted). Plan to spend first couple of days/nights in LV then tool off into Arizona and just drift in the hire car). Be back in LV end of first week in Feb to meet with some friends from Houston for a few days incl Grand Canyon.
Any tips on "must see's, in Arizona ? Must Avoid ? Weird traffic laws ? Likely weather ? Best hire car oputfit, (would like something decent), etc etc. Have done the usual research but there's no substitute for local knowledge.
Done lots of driving in USA, (VA, NC, MD, PA, TX), and only ever been arrested once - in Richmond VA - "Failure to Yield" after a young twonk t-boned my hired Dodge when I was halfway through a left turn. My fault, I saw him charge away from his traffic lights but I just couldn't find "Hover" on the auto shift. Went to court, (scary experience as the traffic court was closed that day and I was in a court dealing with drugs etc and a not-very-happy Judge). but case was dismissed. So, mixed feelings about Richmond but met a superb police officer............even though he arrested me he was sooooo polite and charming. Even bought us a coffee after court. Just like in England, NOT !!
Anyway, enough rambling. Any comments gratefully received. Thanks in anticipation.
