The fluid level drops over time as the pads & discs wear. If you're about to do a track day I'd make sure these are OK (or replaced)! If they are replaced see how the fluid level is afterwards, top up if needed and monitor carefully. If they're OK then check for fluid leaks.
Another associated point is that I have known 996s and 986s (I presume 997s & 987s are the same therefore) to often display the brake wear warning light after a few fast laps on track, which has been down to melted wear sensors rather than actual wear. So if the light comes on, check for wear and if it all looks OK keep driving (but check after every session), then get new sensors (only £6ish each, the warning light should self cancel) or disconnect altogether if you're going to use it a lot on track (otherwise the problem will just repeat itself).

When you say 'empty' do you mean below the min line or literally 'empty' ...
If empty - then you may now have air in your system for both the brakes and clutch - so I suggest getting it properly bled BEFORE the track day - you don't really want to find sub standard brakes (especially after the 1Km straight just before the chicane @ Bedford ...
You may also want to investigate why you have lost so much fluid - yes new to fully worn pads will take you from max to near min but to drop below this doesn't sound good ...
