Does anyone have any recommendations for a driving or flying game for the PSP - gonna be taking mine back to my girlfriends mums house and need something to keep me quiet whilst she's gassing with her mum in the kitchen (just transcoding some BSG too)

TOCA 2 is actually quite good, and should be cheap by now. If you've played it on the PS2, it's pretty much the same.
The GTA series isn't bad for driving either, but aim at a different market so may not be what you're after. I've heard good things about the flight sim/school thing, a few different planes to fly about it and meant to be pretty good with the limited control set you have with the PSP.

Burnout legends is a good driving game if you like the arcadey style stuff, no experience of any sims yet though.
You can DL a ridgeracer 2 and Moto GP demo from the PSP site though.
Trying to get 1st place in moto gp will keep you busy for a while.

Whilst I am rather biased on the subject I think WRC PSP was fun to play for the main. I'd imagine you could pick it up cheap now too, as its been out a year or so?

I thought 'Midnight Club Dub Edition' was a really good driving game.

If you want something to pick up and run with, Ridge Racer takes some beating in my opinion.
Don't expect real world dynamics, but it's very playable and difficult to get the last tenths out of it.

Ace Combat for flying, Ridge Racer or Outrun 2006 for driving and your set!

WRC is probably the best driving game, TOCA2 and 2006 are fun and varied, F1 06 is buggy, but entertaining if you can live with the bugs (occassionally the cut scenes will crash) and Moto GP is very good, quite addictive and close racing.

TOCA 2 is good, but at the moment NFS Carbon is helping me get through some very dull underground journeys, graphics are the best i've seen on the PSP.
