Can only give you my take on this... (This has been formed having read quite a lot of posts on here however)...
Water temp shouldn't really go above 100 even in traffic. Typically it should read between 70-90 when running. Two stage fans kick in around 92 and 96 I believe.
Oil temp should be around 10-20 Deg's lower than water temp. So cruising fully warmed should be around the 70 Mark. However, the oil temp sensor is mounted near the front of the engine which means that on cold days doing speeds over about 40mph it affects the temp reading. In traffic your oil temp should be somewhere around the 85 mark.
Oil pressure... obviously this is going to change as engine comes to temperature however expect late 30's - 40's mid revs when up to temp. Oil pressure sender units were prone to failure but have been superseeded by a 'better' replacement that costs around £70.00.
As I say, the above is only my version of the facts. Hopefully you will have a number of replies that should give you an accurate picture.

It is on the air intake box located under the bonnet (drivers side) about half way down. Should be clearly visible, just has a black cable terminated by a black connector.
Quite a logical place for it I suppose really given that the sensor is telling you the temperature of the air going to the engine (not how cold it is outside!).

Agree with Chunder mostly, but oil temp should be more 70-80 degs in normal running. Over 80 after a hot summer track blast. Reading will be falsely low in this weather on a fast run (notice how quickly it climbs the moment you slow at lights/services).
Also, oil pressure readings can vary. Hot, runny summer temp oil should stay above 10psi at tickover, but the important bit is at least 30 psi at 3000 revs. On v cold startup mine reads 70-80 psi sometimes, probably the sensor though.

Do you find you get a dash warning when your Oil Pressure goes that high? I was getting that before Christmas (every now and then) and had the sender unit replaced. So yes, think you're right...
Always scares me Oil Pressure warnings.

No I don't get a warning - I think the warning comes on at 100psi.

The OP relief valve kicks in at 50. If you are getting 70-80, then either the sender is dodgy or the OP releif valve is. The latter is much worse than the former!

I'll get the garage to check when its in for clutch investigations and upper rear wishbones bushes and gearbox rear oil seal ... as much as poss under warranty :-)
My oil temp does not go beyond 50 in this weather do people really get 70 at this time of year???
I have to confess as well when it gets to 40 and I am travelling along a I kind of assume in must be hotter than that bearing in mind the location of the sensor....is this really not the case???
Also noticed since I have had a new ECU Dec 06 the rev warning lights come on at different stages based of the oil temp, I was quite impressed with this as it does show someone was thinking about the problems
