Sendmail by an absolute complete and utter mile.
I concur - all of those smart mail hosts, forwarders and ISP's pretty much use sendmail without exception.
Corporate use? That will be Microsoft Exchange followed by Lotus, sorry *cough*, IBM Notes. Then the remaining percentages picked up by the niche players.... shame as some of the niche players are pretty good!

What do you mean by mail server though?
end to end including SMTP to mailbox or component parts?
end to end including SMTP to mailbox or component parts?
The usual terminology is Mail User Agent (MUA) for the thing people are sitting in front of (Mutt, Evolution, Outlook, etc.) and Mail Transfer Agent (MTA) for the servers that hand the mail off, such as sendmail, Exchange (spit) and so on.
