At least on the PC version, they're all on the GPS, so you just filter the points of interest for car dealerships and they'll all appear on the map. The ones you haven't visited will be a lighter grey, simply target each one and drive there.
On a new game you can usually do the whole lot within an evening, if you've already uncovered lots of roads it'll be easier as you'll probably have a road close to each dealership to start from.

for bike showrooms, no skill level req; just find all car showrooms. to do this,zoom out to the big island view; filter to just dealerships, and the ones in gray boxes are unvisited (black boxes are visited) hope that helps; when you unlock them get a ninja ZX10 or MV Agusta F4 Tamburini. ZX10 betteer curves & acceleration; MV beter top end.
